3-Ingredient Pancakes

I have an announcement: the old P, the real blogger inside, is making a comeback as of late, my friends.

All this alone time, life-evaluation, reflection, &, lets face it, BOREDOM got me thinking about what it is I truly enjoy. What do I want more of in my life? What do I like about my career? WHY did I choose this particular path in the first place?

Well, as far as my career goes, the answer is quite simple: I genuinely enjoy writing & sharing on a scale larger than a one-on-one conversation allows ( though writing on my blog has always felt like I’m having a conversation with YOU, specifically. you get my point. )

I started my blog at 3AM, sitting alone in my college home, on a wave of inspiration. I was 20 years old and I just felt like WRITING.

In an effort to feel closer to myself, I want to put more effort & time into writing & creating longer-form content. Like the good ol’ days, when people read blogs regularly.

I’ve told myself: people don’t READ blogs anymore. people want quick content, easy solutions, videos, swipe-up links, etc.

& then I realized: do I care? Probably not. It makes me happy, and while I obviously hope this content can be useful, it’s a process I enjoy. So, I’m fucking DOING IT, okay??? Are we into this?

ANYWAYS, long, explanatory intro OVER. I’ll get to the good stuff now.

That was quite a deep & meaningful intro for today’s topic: healthy pancakes.

LOL. Switching gears.

I mentioned these 3-ingredient pancakes on my Instagram story a few days ago, and they seemed to be a big hit with you guys! I adapted the basic recipe from a blog called Run Eat Repeat, where you can find plenty more simple & delicious recipes.

Let’s get to the pancake making, shall we?

3 ingredient banana pancakes by hustle and halcyon

ingredients

( makes about 2 servings )

2 small, ripe bananas

1 cup quick oats

2 eggs

+ optional ingredients

1/2 tsp baking soda: will make your pancakes fluffier

1/2 tsp sea salt

1/2 tsp cinnamon

1/2 tsp vanilla


how-to

  1. blend ingredients in a blender for quick & easy mixing.
  2. grease skillet ( I use coconut oil! ) + set to a medium-low temperature.
  3. let sit until edges start to bubble & one side is cooked through.

some notes on toppings

I make these pancakes with all of the included add-ins, and then I top them with agave syrup & fruit, generally.

You could make them completely your own, obviously! Do your thing. I like the idea of topping them with almond butter + chocolate, almond butter + jam, chocolate + strawberries, etc.

You get the picture.

I’ll either save the extra batter in the fridge to prepare later ( though it doesn’t store well for a long time ), OR I prepare all the pancakes and save extra pancakes in the freezer/fridge for toasting later.


I hope this pancake recipe can provide you with a small, simple moment of indulgence for yourself ( or for yourself + your loved ones ) in the face of the weird energy in the air right now.
