OMG HOW CUTE ARE THESE LITTLE BEEBUS SANDWICHES?!
I got the idea for these healthy mini waffle sammies from one of my FAVORITE clean-eating Instagram accounts, NOMSTOP. Clever name too, right? ( side: she used raspberries instead of blackberries for hers ).
I like throwing these together for a quick little breakfast ( or snack ) when I’m feeling pretty lazy. You can also make them a gazillion different ways, which is the norm for all of the recipes that I feature on H+H.
For example, you can use multigrain, gluten-free, or regular waffles and switch up the fruit to your liking ( I’m making them tomorrow with strawberries…. yum-o ).
I prefer to use blackberries for these waffle sandwiches because you can squish them in between the waffles & it’s a legit ‘jelly’ situation. Ugh, PB&J. A classic for a reason.
WHAT YOU’LL NEED
♥ 2 Frozen Waffles ( I used Gluten-Free Eggo )
♥ 2 tbsp Peanut Butter or PB2
♥ Handful of Berries
HOW-TO
♥ Cook frozen waffles in toaster or in oven ( as the package instructs ).
♥ Spread peanut butter or PB2 ( I used PB2 for mine ) onto one of the waffles.
♥ Cut waffles each into 4 pieces ( pizza-slice style )
♥ Place berries of choice between the waffle sides, like a sandwich.
♥ Nom.
Super easy, healthy, and so freaking yum.
