Y’all. Look how cute this cake is.
I’ve been trying to find some really, really good/simple/healthy recipes for you peoples lately, and naturally I’ve had a few hits ( this recipe ) & a few unfortunate misses.
Example of a MISS: my ‘healthy’ cheesecake that I slaved over yesterday. I spent a zillion dollars on top-notch organic ingredients & really tried to make it all flawlessly. This morning, after it ~chilled for 6 hours~ ( this biggest diva of a dessert ), I pulled it out of the fridge a crackly, funky-smelling mess. Into the trash went all my money and efforts.
Not to fret, wieners. I will master the art of healthy cheesecake & share it with y’all ASAP. I’m not one to give up.
THIS cake, however, is YUM, if I do say so myself. I found this recipe on The Big Man’s World via Pinterest. PS: The Big Man’s World has lots of simple recipes & such, so definitely check it out!
Y’all know I love recipes that are simple, clean, & quick to make, so a cake that I can make in a mug in less than 5 minutes with minimal clean-up and that is filled with good-for-you ingredients kills it, as they say.
This mug cake is also paleo, gluten-free, high in protein, and has the ability to be Vegan ( find all substitutions for vegan-izing or making it paleo here )!
WHAT YOU’LL NEED:
1 .5 T coconut flour
1 T flour ( almond flour for paleo & gluten-free! )
pinch of sea salt
pinch of cinnamon
1/2 tsp baking powder
1 T organic granulated sugar ( sub honey/coconut sugar/agave for paleo! )
1/2 tsp vanilla extract
1 large egg white
1/4 cup almond milk
handful of sprinkles

HOW-TO:
1] In a small bowl, combine dry ingredients VERY WELL.
2] In separate small bowl, combine the almond milk, vanilla extract & egg white and whisk lightly. Then add mixture to the dry mixture and mix until just combined.
3] Grease a large mug ( I used coconut oil ) and pour in batter & top with/mix in sprinkles.
4] Microwave for 50 seconds-2 minutes depending on wattage ( I did 2 mins ).
5] ENJOY, BEEBUS.

You’ll just switch out the regular egg for a flax egg I believe!! Hope this helps! xx
