Ayyye, babes.
Today’s nommmmmy dish is a simple, light summer salad. Aka: the perfect afternoon snack if you’re craving something savory.
This snack takes about 5 minutes MAX to make, and it’s loaded with omega-3 fatty acids, vitamins, & antioxidants. Occasionally, I’ll add a protein like chicken or shrimp and have this as a meal, either for lunch or dinner.
BUT– I’ll more often whip this up for a quick midday boost.
Working from home, staring at a computer screen for most of the day, can be weirdly exhausting & monotonous, so I look forward to taking a break to eat something nutrient-dense in the afternoon. I’ll usually have my snack with a HUGE ice water ( with lemon ) out on our balcony, and take a second to CHILL.
Okay, let’s get to the good stuff.
ingredients
1/2 – avocado
1 – tomato
1/4 cup – feta cheese
sea salt & pepper
how-to
slice the tomato & avocado into thin slices. lay tomato down first, with avocado layered on top. top with feta, & sprinkle with sea salt and pepper. optional: add hot sauce or protein to kick things up a notch.
Like I said, this snack is SUPER easy to whip up. I usually have these ingredients laying around, because my morning omelet and/or my lunch salad includes all of these foods ( obsessed ).
The feta and the salt/pepper gives this fresh dish just a little more flavor. Like I mentioned above, adding a dash of hot sauce gives it a little extra kick if you’re into that kind of thing.
SO ANYWAYS– I was a major scrub this weekend, so I’m getting my life together this week. Think: to-do list mastering, lots of blog posts, eating clean, & getting my ass outside to exercise.
