For today’s post, I have another almost-too-obvious recipe idea for y’all ( & this one is PERFECT for Valentine’s Day themed anything! ).
As a self-diagnosed dessert ADDICT, I have a real problem with sweets. I HAVE to end both lunch & dinner with something sweet. If I skip dessert, the meal just feels unfinished.
I do my best to provide my body with the right nutrients that it needs to function, & I try to stay away from loads of sugar, saturated/trans fats, processed foods, artificial ingredients, etc. The usual.
I’d LOVE to dig into a personal chocolate cheesecake on a daily basis, but clearly that’s not realistic. So, I’ve settled for various SIMPLE desserts that are made with “healthy”-ish ingredients.
Enter: easy, 2-ingredient chocolate syrup!
I pair this 2-ingredient chocolate syrup with strawberries, bananas, rice puffs, gluten-free bread, etc. when I’m craving something sweet after dinner.
Pro Tip: always eat this while sipping some Perrier, because it fills you up more & it feels extra fancy.
I’ve always been a fan of chocolate dipped anything. If you’ve tried melting chocolate in the microwave at home, you know it comes out a little thick, clumpy, & sticks to the side of the bowl.
For my chocolate syrup, I heat dark chocolate with some coconut oil to thin it out & pack it with extra healthy fats.
Optional addition: some cinnamon for a lil extra kick.
Ingredients
2 Portions of Hershey’s Dark Chocolate
1/2 – 1 Tsp of Coconut Oil
How To
I buy the BIG ASS dark chocolate bar in the candy aisle at the grocery story, so use more than two little bars if your chocolate bar is smaller.
I start with my two bars in a mug, & heat them in the microwave in 30 second increments. After each 30 seconds, I remove the mug from the microwave & stir the chocolate to ensure I don’t burn it.
After about 1 to 1 & 1/2 minutes, I mix the coconut oil in with the chocolate, & continue to heat until the chocolate can be mixed into a syrup consistency.
And, VOILA, you have your dark chocolatey goodness! I usually slice the strawberries into quarters, & put them in the chocolate bowl, mixing them around to coat them all.
I eat this most nights for dessert, because it’s my favorite lately.
This is giving me major Valentine’s Day vibes, so my timing with this recipe is flawless, if I do say so myself.
