I’ll be spending it doing hours of homework, so that’s kind of a buzz-kill. But, I’ll live. I think.

Okay so these little Zucchini ‘Pizzas’ are, like, all I’ve been eating lately. Since I’ve gone Gluten-Free, I’ve been finding ways to enjoy all my favorite foods sans gluten (i.e. swapping out my hamburger bun for a lettuce wrap or eating tacos in corn tortillas instead of flour ones), and it actually hasn’t been horrible.
Don’t worry though, guys, I’m still a salad-hater. Going gluten-free doesn’t mean I’ve become some crazy, intense-dieter on y’all. I have just found that cutting out gluten relieved my daily headache and makes me feel a whole lot better in general. I’m not doing it to get skinny, peeps. I’ll do a whole post on this soon.
So these mini ‘pizzas’ are made with 3 ingredients, and they take about 15 minutes to prepare & cook. I eat them almost every day, because they’re so freakin’ easy and so damn good. You’re going to be addicted. Here’s the recipe.
WHAT YOU’LL NEED:
♥ One Large Zucchini
♥ 1/4-1/3 Cup of Tomato Sauce
♥ 1/4 Cup Shredded Mozzarella
HOW-TO:
♥ Preheat oven to 350º.
♥ Cut Zucchini into 1/4 inch slices (more or less) & place on an oiled baking sheet.
♥ Top each zucchini with 1/2 a teaspoon (or less) of tomato sauce & shredded mozzarella.
♥ Bake your mini zucchini pizzas until golden brown on top, which will be about 10 minutes.
♥ Eat & repeat.
Y’all. I’m for real. You’re going to want to eat these every day. They’re such a good alternative to regular pizza & I’m sure you could get all creative with it. Let me know if you top yours with something different! Give me ideas, people.

These look delicious, I’m going to have to make them asap! I actually went gluten free in January. I was tired all the time, always had a headache, and far too frequently just felt terrible. Crazy how taking out gluten can make such a difference (even for a person without celiac disease). Keep the gluten-free recipes coming & hope you start feeling better soon! (:
