Happy Sunday People!
In lieu of a Rise & Shine post this Sunday, I’m sharing my (recent) favorite breakfast recipe with y’all: Avocado toast. But not the normal kind…. the flavor-filled edition. You guys saw a little sneak peak of this recipe on my Instagram, and if you follow me on snapchat (payton_sartain), you’ve seen this recipe 3829348 times. (Sorry but not really).
Can I be honest?
I don’t really like the taste of avocados.
There, I said it. Glad I got that off my chest. I know it’s like a blogger-sin to dislike the taste of avocados (which reminds me… I’m not the hugest fan of macaroons either… Am I the worst blogger ever or nah?). Don’t get me wrong, I love me some guac or avocado in my smoothies, but eating them alone kinda gross me out. So, what’s a girl to do when she doesn’t like your average, boring avocado toast?? Make her own, duh.
My avo toast is more like a skinny-guac mixture (which I’ll be doing a separate post about… love me some homemade chips & guac) with TONS of spice & flavor. As per usual with the spiciness. I usually top off this recipe with a fried egg or two egg-whites (if I’m trying to cut the calories) & sriracha.
WHAT YOU’LL NEED
♥ 1 Piece of Whole Grain Toast
♥ 1/2 a Medium Avocado
♥ 1 Tablespoon Greek Yogurt
♥ Two (or More) Lime Wedges
♥ 1/2 Tablespoon Tabasco (I used the Jalapeno kind!)
♥ Pinch of Fine Sea Salt
♥ Pinch (or more) of Black Pepper
♥ Pinch of Chili Powder
HOW TO MAKE
♥ Make the Toast (however you like to do it)
♥ Mash Avocado in a medium bowl.
♥ Add Greek Yogurt and combine until desired consistency.
♥ Add the rest of the ingredients and mix.
♥ Spread Avo Mixture onto toast.
♥ Top with Fried Egg/Egg Whites & Sriracha (more more more spice!)
This recipe is super simple, easy to customize and SO yum-o. For more skinny-ish recipes, visit my recipe index.
On an unrelated note, I’ll be in NYC this thursday-sunday! Anyone have any suggestions (food/shopping/things to do???). Lemme know!
Hope everyone is having the best Sunday ever. I’ll be detoxing & getting ready for shooting in Palm Springs tomorrow! Follow along on my adventure via snapchat, payton_sartain, & Instagram, @paytonsartain!
Also, don’t forget to wish all the badass dads out there a happy, happy father’s day!
xx
